The gf hates dark chocolate. What would happen if I used milk chocolate? Or does the heavy cream make it not taste as bitter as regular dark chocolate?

@lexandra410 Click the link below the video – there’s a list of ingredients there. You don’t need butter. And best to use cocoa powder I think.

@MrBagginsEsq You have to keep in mind they don’t have a lot of meat on them. You may have to make a couple or make something else also, depending how many people you have for dinner.
December 29th, 2011 at 12:05 pm
@MrBagginsEsq I guess you could if you wanted too. I like turkey also, and I just think of turkey for thanksgiving. Christmas you could do a ham, lasagna, beef, anything really. A lot of people make a turkey again. I was making a point of thinking of making goose, I love it and I don’t think too many people think to make it for x-mas. If you can get one for thanksgiving great, the only time I’ve seen them out is x-mas.
December 29th, 2011 at 12:41 pm
@TheRabidPosum And why no goose for thanksgiving? Unlike most people I think I’d prefer raising geese.
December 29th, 2011 at 12:59 pm
I cannot eat quails for they remind me of the chickens in Eraserhead.
December 29th, 2011 at 1:52 pm
Can you do these inside of a Tagene?
December 29th, 2011 at 2:26 pm
Hi chef, I tried that but quail is a bit too gamey.. I tried it with poussins (very young chicken) and it turned out much much better. Thanks for the vid.
December 29th, 2011 at 3:22 pm
Looks Good
December 29th, 2011 at 4:11 pm
@foodwishes never had quail before. I know you have a duck recipe, one of my faves, but my all time fav is goose. Seems like you can only get it around Christmas time. Around the holidays you should do your outtake on goose. Turn a lot of people on to something new that was the original traditional thing, they will wonder how turkey ever took over. Save the turkey for thanksgiving, once people taste goose they will see what they were missing and never go back.
December 29th, 2011 at 4:21 pm
